About the brandy

Pálinka is one of the noblest traditions of Hungarian gastronomy . Its history, method of preparation and consumption culture go back centuries, and it still plays an important role in our celebrations, entertaining guests or experiencing memorable moments.

What is pálinka?

Pálinka is a fruit spirit that can only be made in Hungary (and four Austrian provinces), exclusively from Hungarian fruit, by fermentation and distillation . The use of the name is protected by European Union law, so only the drink made in this way can bear the name " pálinka ".

What can it be made of?

The most commonly used fruits are:

plums, pears, peaches, apples, cherries, marc (from grapes), strawberries .

In reality, however, any ripe, healthy fruit can be a suitable ingredient for good pálinka.

What is a small-batch pálinka?

Kisüsti pálinka is produced by double-distillation in a 1000-liter pot still with a copper surface . This traditional, artisanal method ensures the drink's characteristic , yet silky, flavor .

Maturation – the taste of time

Pálinka is often aged in wooden barrels , which gives the drink additional depth and layers of flavor.

  • The aged pálinka is aged for at least 3–6 months.

  • The ópalinka is aged for at least 1–2 years.

  • The bed brandy must be aged with the fruit for at least 3 months.

How to consume it?

Many people drink it chilled, but this way we lose the aromas and flavors. It is recommended to serve pálinka at 18–20 °C , so that the fruity aromas can fully develop.

It is best to drink it in a tulip-shaped glass : the concave bottom and narrow opening enhance the aromas and help enhance the taste experience. Good pálinka doesn't burn, it doesn't scratch, it doesn't give you a hangover - it just leaves a long, fruity aftertaste.

The art of tasting

Pálinka is not a drink to be "knocked down" , but to be enjoyed in sips and savored . A well-made pálinka is an experience for all the senses – and even minutes after the last sip, the scent lingers in the empty glass as a reminder.

That is why pálinka evaluation - similar to wine tasting - is based on serious professional foundations : they take into account the aroma , taste , purity , fruit character and aftertaste .
